Instructions

How to Make Lasagna Soup

  • In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until they turn translucent, about 5 minutes. Next, add minced garlic and cook for another minute until fragrant.
  • Stir in the ground beef, cooking until browned, approximately 7-10 minutes. Drain any excess fat, then incorporate the crushed tomatoes, mixing well to combine all the flavors.
  • Add the beef broth to the pot; bring to a simmer while scraping up any bits stuck to the bottom.
  • Toss in your chosen pasta along with fresh basil and oregano. Cook according to package instructions until the pasta reaches an al dente texture, about 8-10 minutes.
  • Stir in the ricotta cheese until it’s fully melted and incorporated, creating a creamy texture throughout the soup.
  • Ladle your hearty soup into bowls, topping each with shredded mozzarella cheese and a sprinkle of fresh basil before serving.
