How to Make Dragon Chicken

  • Combine chicken pieces, egg white, cornstarch, salt, and pepper in a bowl. Allow this mixture to sit for 10–15 minutes.
  • Heat vegetable oil in a skillet over medium-high heat until shimmering. Fry the marinated chicken in batches for about 4–5 minutes or until golden brown. Drain on paper towels.
  • In the same skillet, add sesame oil and heat it. Sauté garlic, ginger, and dried red chilies for 1-2 minutes until fragrant.
  • Stir in tomato ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Simmer for 2–3 minutes, adjusting thickness with water if needed.
  • Gently toss the fried chicken pieces in the sauce, ensuring each piece is well coated. Simmer for an additional minute.
  • Serve hot, garnished with green onions and sesame seeds, paired with steamed rice, noodles, or lettuce cups.

Notes

Consider adding a squeeze of lime or lemon juice for an extra zing!
