Ingredients

For the Chicken

  • 1 pound Diced Chicken Substitute with turkey or tofu if desired.

For the Base

  • 2 tablespoons Olive Oil Any neutral oil works.
  • 1 medium Onion Yellow or white onion recommended.
  • 2 cloves Garlic Fresh garlic cloves are preferable.
  • 1 cup Uncooked Rice Long-grain white rice recommended.

For the Vegetables

  • 2 medium Carrots Can be replaced with peas or bell peppers.

For the Broth

  • 4 cups Chicken Broth Use vegetable broth for a vegetarian alternative.

For Seasoning

  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

For the Creaminess

  • 1 cup Almond Milk Substitute with oat or coconut milk if desired.

For Garnishing

  • 2 tablespoons Parsley Chopped, for garnish.

Instructions

Cooking Instructions

  • Heat the olive oil in a large pot over medium heat. Brown the diced chicken for about 5-6 minutes until cooked through.
  • Add chopped onion to the pot and sauté for 2-3 minutes until softened. Then add minced garlic and cook for another 30 seconds.
  • Stir in the uncooked rice and sliced carrots. Pour in chicken broth along with dried thyme, salt, and black pepper; mix well.
  • Cover the pot, reduce heat to low, and let it simmer for 18-20 minutes, stirring occasionally.
  • Uncover and gently stir in almond milk and chopped parsley. Simmer uncovered for an additional 3-4 minutes.
  • Taste and adjust the seasoning if needed. Serve hot, garnished with parsley.

Notes

Optional: Add a squeeze of lemon juice just before serving for a refreshing lift.
