Preparation
In a medium bowl, beat together the softened cream cheese, sour cream, shredded cheddar, chopped chives, chopped dill, garlic powder, and a pinch of salt and pepper until smooth.
Chill the cheese mixture in the refrigerator for about 15-30 minutes to firm it up.
Shape the chilled cheese mixture into a round ball with your hands.
Using a small knife, carve ridges into the cheese ball to resemble a pumpkin.
Insert a celery stalk or a chive at the top for the pumpkin's stem.
If desired, roll the cheese ball in chopped nuts or sprinkle paprika on it for added color.
Chill the shaped cheese ball in the fridge until ready to serve.
Serving
Take the cheese ball out of the refrigerator shortly before your guests arrive and place it on a decorative platter with crackers or vegetable sticks.
Provide small utensils or spreaders for easy serving.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The mixture can be shaped and chilled a day ahead without decorations, adding those right before serving.
