  • 1 medium Onion Yellow or white onions are ideal.
  • 4 cloves Minced garlic Fresh garlic is preferred.
  • 4 cups Chicken broth Opt for low-sodium.

For the Spices

  • 1 tsp Cumin Essential for flavor.
  • 2 tbsp Chili powder Adjust based on spice preference.
  • 1 tsp Oregano Dried oregano is best.

Instructions

Steps

  • Layer the Chicken: Begin by placing the chicken breasts at the bottom of your crockpot.
  • Add the Ingredients: Gently add the drained white beans, diced green chilies, chopped onion, and minced garlic on top of the chicken.
  • Pour the Broth: Carefully pour in the chicken broth and sprinkle the spices over the mixture.
  • Set the Cooker: Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • Shred the Chicken: Remove the chicken and shred it using two forks, then return to the pot.
  • Mix in Cheese & Cream: Stir in softened cream cheese and sour cream until smooth.
