  • 4 pieces Boneless, skinless chicken breasts
  • 2 tbsp Olive oil

For the Filling

  • 1 cup Fresh cranberries
  • 2 tbsp Honey
  • 1 tbsp Orange juice
  • 1 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 8 oz Brie cheese

For the Topping

  • ¼ cup Chopped fresh parsley
  • 1 cup Panko breadcrumbs
  • 2 tbsp Butter Melted

Instructions

How to Make Impressive Cranberry Brie Stuffed Chicken

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a saucepan over medium heat. Add fresh cranberries and cook, stirring occasionally, until they soften, about 5-7 minutes.
  • Stir in honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook until thickened, about 3-5 minutes.
  • Remove from heat and let the mixture cool slightly while you prepare the chicken.
  • Cut pockets in the chicken breasts carefully.
  • Stuff the chicken breasts with the brie and cranberry mixture generously.
  • Secure the openings with toothpicks to prevent the filling from spilling out during cooking.
  • Sear the stuffed chicken in a hot skillet over medium-high heat until golden brown, about 4-5 minutes on each side.
  • Mix panko breadcrumbs with melted butter in a bowl. Sprinkle this mixture generously on top of each seared chicken breast.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Let rest for 5 minutes before serving.
