How to Make Super Tender Crockpot Beef Short Ribs

  • Season the beef short ribs generously with salt and black pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear the short ribs on all sides for about 3-4 minutes each side, then transfer them to the crockpot.
  • In the same skillet, add sliced onions and sauté for 3-4 minutes until softened. Scrape any browned bits for more depth.
  • Stir in minced garlic and cook for about 30 seconds until fragrant.
  • Combine beef broth, red wine, soy sauce, Worcestershire sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary in the skillet. Simmer for a few minutes to meld flavors.
  • Pour the sauce over the ribs in the crockpot, adding bay leaves. Cook on low for 8-10 hours or high for 4-6 hours until tender.
  • Optionally, remove ribs and skim excess fat from the cooking liquid. Simmer the liquid until it thickens.
  • Serve with sauce over mashed potatoes or rice.
