Chicken Ingredients

  • 4 pieces Chicken Breasts

  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic minced
  • 1 cup Chicken Broth
  • 2 tablespoons Lemon Juice

Mashed Potatoes Ingredients

  • 2 pounds Potatoes Russet or Yukon Gold
  • ½ cup Milk
  • 4 tablespoons Unsalted Butter
  • to taste Salt
  • to taste Pepper

Glazed Carrots Ingredients

  • 4 cups Carrot Sticks cut into uniform pieces
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Butter

Instructions

Chicken Preparation

  • Season the chicken breasts with salt, pepper, dried oregano, and dried thyme.
  • Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes per side.
  • Remove chicken from the skillet and sauté minced garlic for about one minute until fragrant.
  • Deglaze the skillet with chicken broth and lemon juice, scraping up the bits. Return chicken and simmer for 5 minutes.

Mashed Potatoes Preparation

  • Boil salted water in a pot, add cubed potatoes, and cook until tender, about 15-20 minutes.
  • Drain the potatoes, mash with milk, butter, salt, and pepper until smooth.

Glazed Carrots Preparation

  • Sauté carrot sticks in butter over medium heat for 5 minutes. Add brown sugar and cook until tender.

Notes

Optional: Garnish with fresh parsley before serving for added color and flavor.
