Steps to Create Truffles

  • Chop the dark cooking chocolate and grate the fresh orange zest, placing them aside for later use.
  • Line a baking tray with parchment paper and prepare a bowl with chocolate sprinkles for coating.
  • In a saucepan, combine the cold heavy cream with grated orange zest. Gently heat until small bubbles form around the edges, then remove from heat.
  • Add the chopped chocolate to the hot cream mixture. Let it sit undisturbed for 2-3 minutes, then stir gently until smooth and shiny.
  • Pour the ganache into a shallow dish and refrigerate for at least 2 hours, or until firm yet pliable.
  • Use a spoon or mini ice cream scoop to measure portions of the chilled ganache, rolling them into smooth balls.
  • Toss each truffle in chocolate sprinkles, gently pressing them onto the surface for an even coating.
  • Place the coated truffles on the baking tray and chill for an additional 30 minutes to set.

Notes
