Instructions
Steps to Create Truffles
Chop the dark cooking chocolate and grate the fresh orange zest, placing them aside for later use.
Line a baking tray with parchment paper and prepare a bowl with chocolate sprinkles for coating.
In a saucepan, combine the cold heavy cream with grated orange zest. Gently heat until small bubbles form around the edges, then remove from heat.
Add the chopped chocolate to the hot cream mixture. Let it sit undisturbed for 2-3 minutes, then stir gently until smooth and shiny.
Pour the ganache into a shallow dish and refrigerate for at least 2 hours, or until firm yet pliable.
Use a spoon or mini ice cream scoop to measure portions of the chilled ganache, rolling them into smooth balls.
Toss each truffle in chocolate sprinkles, gently pressing them onto the surface for an even coating.
Place the coated truffles on the baking tray and chill for an additional 30 minutes to set.
Notes
