Preheat oven to 425°F (220°C).
Peel, core, and thinly slice the Granny Smith apples.
In a saucepan, melt the unsalted butter over medium heat. Stir in the all-purpose flour until smooth, then add white sugar, brown sugar, and water. Bring to a gentle boil and let simmer.
Place one portion of the double-crust pie pastry into a 9-inch pie pan. Mound sliced apples on top and weave the second pastry into a lattice crust.
Drizzle the warm butter-sugar mix over the lattice crust.
