Instructions
How to Make Herb-Crusted Parmesan Potatoes
Preheat the oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
Toss halved baby potatoes in a large bowl with melted unsalted butter, salt, and black pepper until evenly coated.
Mix together grated Parmesan cheese, garlic powder, and dried oregano in a separate bowl.
Dip the cut side of each potato half into the Parmesan mixture, pressing gently to stick, and place cut side down on the baking sheet.
Brush remaining melted butter over the tops of the potatoes and sprinkle leftover Parmesan mixture on top.
Roast in the oven for 25-30 minutes until tender and golden brown.
