Ingredients

For the Flatbread

  • 1 piece Flatbread Store-bought or homemade

For the Chicken

  • 2 pieces Boneless, skinless chicken breasts Can swap for grilled vegetables
  • 1 tablespoon Olive oil Or avocado oil
  • to taste Salt
  • to taste Pepper

For the Toppings

  • ½ cup Fresh basil pesto Homemade or store-bought
  • 1 cup Shredded mozzarella cheese Can substitute with provolone or fontina
  • ¼ cup Grated Parmesan cheese Or pecorino
  • 1 cup Cherry tomatoes Diced red bell pepper can be used instead

For Garnish

  • a few Fresh basil leaves Optional for presentation

Cooking Instructions

  • Preheat the oven to 400°F (200°C).
  • Prepare the chicken by patting it dry and seasoning it with salt and pepper.
  • Cook the chicken in a skillet with olive oil over medium-high heat for about 6-7 minutes on each side.
  • Rest the chicken for 5 minutes, then slice it thinly.
  • Spread pesto evenly over the flatbreads on a baking sheet.
  • Distribute the sliced chicken over the pesto.
  • Top the flatbreads with shredded mozzarella and scattered cherry tomatoes.
  • Bake in the oven for 10-12 minutes until the cheese melts and the edges are golden.
  • Broil for an additional 1-2 minutes, if desired, for extra crispiness.
  • Cool briefly, slice into servings, and garnish with fresh basil before serving.

Notes

Optional: Drizzle with balsamic glaze for a sweet touch. Store leftover flatbread in an airtight container for up to 3 days.
