Preparation
In a large bowl, whip the heavy cream until stiff peaks form, which should take about 3-5 minutes. Set it aside.
In a medium bowl, cream together the powdered sugar and softened cream cheese until smooth. Add the vanilla, peppermint extract, and food coloring, mixing thoroughly until well combined.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Carefully pour the peppermint filling into the Oreo crust, spreading it evenly with a spatula.
Spread a layer of Cool Whip over the pie and sprinkle crushed peppermint on top. Chill the pie in the refrigerator for at least 1-2 hours before serving.
Notes
Allow pie to chill for at least 4 hours, preferably overnight, for best texture. Top with crushed peppermint just before serving to maintain crunch.
