Cooking Instructions

  • Turn your Instant Pot to sauté mode and heat a tablespoon of olive oil. Add the chopped onion and minced garlic, sautéing for 2-3 minutes until fragrant and translucent.
  • Add the boneless, skinless chicken breasts, seasoning them with salt and freshly cracked black pepper. Cook for 2-3 minutes until they’re lightly browned but not cooked through.
  • Stir in the rinsed long-grain white rice, low-sodium chicken broth, and frozen mixed vegetables. Mix well and ensure everything is evenly distributed.
  • Secure the Instant Pot lid tightly and set the valve to sealing. Cook on high pressure for 8 minutes, then let the pressure release naturally for 5 minutes before performing a quick release.
  • Once the lid is removed, pour in the heavy cream and add the shredded cheddar cheese. Stir until creamy and the cheese has melted completely.
  • Spoon the creamy chicken and rice into bowls, garnishing with fresh herbs if desired, and serve hot.

Notes

For added flavor, top with freshly chopped parsley just before serving.
