Ingredients

Beef & Potatoes

  • 1 pound Beef stew meat Cut into bite-sized pieces
  • 1 pound Baby potatoes Halved for even cooking

Garlic Butter Sauce

  • ½ cup Unsalted butter Melted
  • 4 cloves Garlic Minced
  • 1 teaspoon Onion powder Can be replaced with fresh onions
  • 1 teaspoon Smoked paprika Sweet paprika can be used for milder taste
  • 1 teaspoon Dried thyme Fresh thyme can be substituted
  • 1 teaspoon Dried rosemary Adjust quantity if using fresh
  • 1 teaspoon Salt Adjust to taste
  • ½ teaspoon Black pepper White pepper can be used as a substitute

  • 1 cup Beef broth Low-sodium preferred
  • 1 tablespoon Olive oil For searing the beef

Preparation

  • Cut the beef stew meat into bite-sized pieces and halve the baby potatoes.
  • Optionally, parboil the halved baby potatoes for about 5 minutes.
  • Heat olive oil in a skillet over medium-high heat and sear the beef pieces until browned.
  • In a bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  • Layer the halved baby potatoes and seared beef in the slow cooker, then pour the garlic butter sauce and add beef broth.
  • Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  • Let the dish rest for about 10 minutes before serving.
