  • 15 oz Black Beans Kidney beans can be substituted.

  • 8 oz Plain Cream Cheese Low-fat options are available.

  • 2 Fresh Limes Bottled lime juice can be used in a pinch.

For Moisture

  • 0.5 cup Chicken Broth Low-sodium versions are great.

Instructions

Preparation

  • Start by placing your thawed boneless, skinless chicken breasts into the slow cooker.
  • Add the drained black beans, kernel corn, Rotel tomatoes, onion powder, ranch seasoning, and ground black pepper.
  • Squeeze the juice of two fresh limes over the mixture, then pour chicken broth over the top.
  • Place a whole block of cream cheese on top of the ingredients.
  • Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours.
  • Remove the chicken and shred it with two forks, then return the shredded chicken to the pot.
  • Serve warm in soft tortillas for tacos, over rice, or as a topping for nachos.

Notes

Garnish with fresh cilantro or avocado slices for extra flavor.
