Directions
Preheat your oven to 350°F (175°C) and toast 2 cups of pecans on a baking pan for about 8-10 minutes until golden and fragrant.
Melt 6 tablespoons of unsalted butter in a microwave-safe bowl.
Combine the melted butter with ½ cup of light brown sugar, ½ cup of granulated sugar, ½ cup of light corn syrup, and ½ cup of sweetened condensed milk in the same bowl.
Microwave the mixture for about 6 minutes, stirring halfway through.
Add 1½ teaspoons of vanilla extract and stir in the toasted pecans until coated.
Pour the pecan mixture into a prepared pan and refrigerate for at least 30 minutes.
Melt 2 cups of chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
Scoop portions of the pecan mixture, dip each in the melted chocolate, and place on wax paper to cool.
Refrigerate the dipped turtles for about 30 minutes to set.
Notes
Drizzle extra melted chocolate on top for decoration if desired.
