Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and halve the mini Yukon Gold potatoes.
  • Combine halved potatoes in a large bowl with olive oil, dried parsley, garlic powder, sea salt, and black pepper. Toss until well coated.
  • Grate Parmigiano Reggiano into a bowl, and pour melted butter over it, mixing to form a thick paste.
  • Spread the cheese mixture evenly across a baking dish.
  • Place potatoes cut-side down into the cheese paste, gently pressing them.
  • Bake for 25-26 minutes, or until golden brown and crispy.
  • Let rest for 10 minutes after baking.
  • Optional: Sprinkle with fresh parsley before serving.
