Ingredients

For the Chicken

  • 2 tablespoons Olive Oil Can substitute with avocado oil or coconut oil
  • 2 pounds Boneless Skinless Chicken Breast Chicken thighs are a juicier option

  • 4 cloves Fresh Minced Garlic Can substitute with powdered garlic

For the Creamy Sauce

  • 1 cup Canned Coconut Cream Chill and scoop solid part only
  • 1 cup Chicken Broth Homemade or store-bought
  • ¼ cup Nutritional Yeast Imparts a cheesy flavor

For the Flavor Enhancers

  • 1 teaspoon Dried Oregano Fresh oregano is an alternative
  • 1 tablespoon Arrowroot or Potato Starch Cornstarch is not Whole30 compliant
  • ½ cup Sun-Dried Tomatoes Chop finely after draining and blotting
  • 1 tablespoon Fresh Basil Optional for garnish

Cooking Instructions

  • Heat olive oil in a skillet over medium heat. Add chicken cubes and brown for about 5-7 minutes on each side until cooked through. Add minced garlic during the last minute.
  • In a bowl, whisk together chicken broth, nutritional yeast, oregano, garlic salt, and arrowroot starch until combined.
  • Drain sun-dried tomatoes, blot with paper towel, and chop finely before adding to the dish.
  • Add sun-dried tomatoes to the browned chicken. Mix well, then add chilled coconut cream and broth mixture. Stir continuously until cream melts.
  • Raise heat to bring to a gentle boil. Simmer for about 5 minutes until sauce thickens to desired consistency.
  • Taste and adjust seasoning if necessary; serve over cauliflower rice or roasted vegetables.

Notes

Chill coconut cream for best texture. Adjust thickness of sauce as needed. Taste test before serving for seasoning balance.
