Instructions
Making Truffles
In a large mixing bowl, beat softened cream cheese, pumpkin puree, powdered sugar, graham cracker crumbs, and pumpkin pie spice until smooth. Cover and chill for 30-60 minutes until firm.
Use a small cookie scoop to portion out about 1 tablespoon of the mixture; roll into balls with your hands and place on a parchment-lined tray.
In a microwave-safe bowl, melt white chocolate in 20-30 second intervals, stirring until smooth and glossy.
Dip each chilled truffle in the melted chocolate, ensuring fully coated. Allow excess chocolate to drip off before placing them back on the tray.
Refrigerate for at least 30 minutes or until the chocolate coating is set. Optionally drizzle with more melted chocolate or sprinkle with cinnamon before serving.
Notes
For an added touch, garnish with finely chopped nuts and remember to let the cream cheese soften for easy mixing.
