Cooking Instructions
Preheat your oven to 425°F (220°C).
Wash and pat dry the sweet potatoes. Slice them into ⅓-inch round slices.
Drizzle olive oil on a large rimmed sheet tray to prevent sticking.
Add the sweet potato slices to the tray and toss them in the oil until they’re nicely coated.
Sprinkle your choice of spices over the slices and drizzle with honey. Toss to ensure even seasoning.
Place the tray in the oven and bake for 20 minutes. Flip the slices and bake for another 20-25 minutes until golden brown.
Transfer the sweet potatoes to a serving platter. Add a pinch of salt, a drizzle of honey, and top with crumbled feta cheese.
Garnish with fresh chives or parsley and serve warm.
