In a saucepan, combine the heavy cream and pumpkin puree; bring to a gentle boil while whisking, then add the ground cinnamon, nutmeg, ginger, and kosher salt to enhance the flavors.
Pour the hot pumpkin mixture over the dark chocolate chips in a bowl; let it sit for 30 seconds before whisking until the mixture is smooth and creamy.
Stir in the room temperature unsalted butter and Pop Rocks to add delightful crunch, then cover the bowl and refrigerate for at least 2 hours until the mixture is firm.
Once chilled, scoop out approximately 2 teaspoons of the mixture and roll them into balls, placing each one onto the lined sheet; chill for an additional 30 minutes to firm up.
