For the Base

  • 1 lb Italian Sausage Substitute with chicken or turkey sausage for a lighter option.
  • 28 oz Diced Tomatoes Use fire-roasted for a smoky flavor.
  • 3 cloves Minced Garlic Substitute with garlic powder if fresh is unavailable.
  • 2 tbsp Italian Seasoning Dried herbs like oregano, basil, and thyme can be used as alternatives.
  • 4 cups Chicken Broth Vegetable broth is a good vegetarian substitute.

For the Creamy Sauce

  • 8 oz Cream Cheese Neufchâtel cheese can be used for a lighter option.

For the Pasta and Greens

  • 20 oz Cheese Tortellini Frozen is convenient but be cautious if using fresh to avoid overcooking.

Instructions

Cooking Instructions

  • In a medium skillet over medium heat, cook Italian sausage until browned, about 5-7 minutes. Drain any excess fat.
  • Transfer the browned sausage to your crockpot. Stir in the diced tomatoes (with juice), minced garlic, Italian seasoning, and chicken broth.
  • Cube the cream cheese and scatter it over the sausage and tomato mixture.
  • Cover your crockpot and cook on low for 4-5 hours or on high for 2-3 hours.
  • In the last 30 minutes, gently stir in the frozen tortellini and fresh spinach.
  • Once everything is cooked, taste your creation and add salt and pepper according to your preference.
  • Ladle the comforting mixture into bowls and enjoy.

Notes

Optional: Sprinkle with freshly grated Parmesan cheese for an extra decadent touch. This dish can be made ahead of time and freezes beautifully.
