  • 2 tablespoons lemon juice Used to create the lemon water bath.
  • 2 tablespoons olive oil For tossing the potatoes before roasting.

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

Preparation

  • In a large bowl, mix cold water with lemon juice to create a lemon water bath.
  • Carefully carve out eyes, a triangle nose, and a slit mouth on each potato using a paring knife.
  • Soak the carved potatoes in the lemon water for about 5 to 10 minutes.
  • Drain the potatoes and pat them dry completely using a clean kitchen towel.

Cooking

  • Toss the dried potatoes in a bowl with olive oil, salt, pepper, onion powder, garlic powder, and smoked paprika until evenly coated.
  • Preheat your oven to 400°F (200°C).
  • Line a baking tray with parchment paper to prevent sticking.
  • Place the seasoned potatoes on the tray and roast them for about 30 minutes, flipping halfway through.
  • Let the potatoes cool briefly after roasting to help them crisp up before serving.

Notes

Feel free to carve different spooky faces for creativity. Adjust the cooking time based on your oven and potato size for best results. The potatoes can be made ahead by prepping and soaking them in lemon water a few hours in advance, but roasting them fresh is ideal for texture.
