  • 1 lb elbow pasta (or any cheddar mac favorite) Other pasta shapes like shells or penne can also be used.
  • 4 tbsp butter
  • 4 tbsp flour
  • 3 cups milk
  • 2 cups shredded cheddar cheese Can experiment with other cheese types.
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 10-12 slices mozzarella (for ghost-shaped mozzarella) Cut into ghost shapes for decoration.
  • Sesame seeds or peppercorns (for ghost eyes) For creating eyes on the ghost shape.
  • Optional: Extra cheddar or breadcrumbs for spooky cheese topping For a crunchy topping.

Instructions

Preparation

  • Start by bringing a pot of salted water to a boil. Add the elbow pasta and cook until it is al dente. Once cooked, drain the pasta and set it aside.
  • In a large saucepan, melt 4 tablespoons of butter over medium heat. Whisk in 4 tablespoons of flour and cook for about 2 minutes until bubbly and lightly golden.
  • Slowly pour in 3 cups of milk while whisking continuously. Keep stirring until the mixture thickens.
  • Remove the saucepan from the heat. Stir in 2 cups of shredded cheddar cheese and 1 cup of grated Parmesan cheese. Add salt and pepper to taste.
  • Fold the cooked pasta into the cheese sauce until every piece is coated.
  • Transfer the mixture to a buttered casserole dish, spreading it out evenly.
  • Cut the mozzarella slices into ghost shapes and place them on top of the pasta. Use sesame seeds or peppercorns for eyes.
  • Preheat your oven to 375°F (190°C) and bake for 20 to 25 minutes until bubbly and golden.
  • Serve warm, ensuring each portion has a ghost on top.

Notes

For delicious leftovers, let the dish cool completely before storing in an airtight container. It can last 3-4 days in the fridge. To reheat, place in the oven or microwave until hot again. Variations include adding bacon bits or diced ham, different cheese types, or vegetables like broccoli.
