Ingredients

For the Roast

  • 3 pounds Chuck Roast You can also use brisket or round roast if desired.
  • 1 packet Ranch Dressing Mix Choose your favorite brand.
  • 1 packet Au Jus Gravy Mix Feel free to substitute with homemade gravy.
  • 5 pieces Pepperoncini Peppers Adjust quantity to suit your spice preference.
  • ½ cup Unsalted Butter Or substitute with olive oil or coconut oil.
  • to taste Salt
  • to taste Pepper

For the Optional Vegetables

  • ¼ cup Onion Quartered.
  • 2 medium Carrots Chopped.
  • 2 stalks Celery Chopped.

Instructions

Preparation

  • Pat the chuck roast dry with paper towels, then season it generously with salt and pepper on all sides.
  • If you're adding optional vegetables, prepare them now by chopping the carrots and celery, and quartering the onion.

Cooking

  • In a hot skillet, add a drizzle of oil and brown the roast on all sides for about 3-4 minutes each.
  • Place the roast in your slow cooker and sprinkle the ranch dressing mix and au jus gravy mix over the top.
  • Add the pepperoncini peppers, prepared vegetables, and a few pats of unsalted butter.
  • Cover the slow cooker and set it on low for 8-10 hours or high for 4-6 hours.
  • Once cooked, transfer the roast to a cutting board to shred it with two forks.
  • Return the shredded beef to the slow cooker and mix it into the flavorful juices.
  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Serve over creamy mashed potatoes, fluffy rice, or as a hearty sandwich filling.

Notes

Optional: Garnish with fresh parsley for added flavor and color.
