Ingredients

Protein

  • 1 pound Boneless Chicken Breasts or Sliced Beef Turkey or tofu can be alternatives.

Vegetables

  • 1 large Bell Pepper Sliced; use colorful varieties or poblano for some heat.
  • 1 large Onion Sliced; can be red or yellow.
  • 3 cloves Garlic Minced; use fresh for the best flavor.

Seasoning

  • 1 packet Fajita Seasoning Mix For a personalized touch, make your own blend.
  • 14.5 ounces Diced Tomatoes Can use fire-roasted for extra richness.
  • 1 tablespoon Olive Oil Avocado oil works as a substitute.
  • Salt and Pepper To taste.

Serving

  • Tortillas Flour or corn; opt for gluten-free if needed.
  • Optional Toppings Sour cream, guacamole, cheese, cilantro, lime wedges.

Instructions

Preparation

  • Slice the bell pepper and onion into thin strips. Mince the garlic cloves.
  • In a bowl, toss the boneless chicken or sliced beef with the fajita seasoning mix along with salt and pepper.
  • Place the seasoned protein at the bottom of the crockpot and layer the sliced bell peppers, onions, and minced garlic on top.
  • Pour the can of diced tomatoes over the layered ingredients.
  • Drizzle olive oil over the mixture.
  • Cover the crockpot and set it to low for 4-6 hours or high for 2-3 hours.
  • Once the cooking time is up, remove the cooked protein, shred it using two forks, and return it to the pot.
  • Mix everything together until well combined and serve with warm tortillas and desired garnishes.

Notes

For a refreshing twist, consider adding sliced avocado on top before serving.
