Instructions
Preparation
Slice the bell pepper and onion into thin strips. Mince the garlic cloves.
In a bowl, toss the boneless chicken or sliced beef with the fajita seasoning mix along with salt and pepper.
Place the seasoned protein at the bottom of the crockpot and layer the sliced bell peppers, onions, and minced garlic on top.
Pour the can of diced tomatoes over the layered ingredients.
Drizzle olive oil over the mixture.
Cover the crockpot and set it to low for 4-6 hours or high for 2-3 hours.
Once the cooking time is up, remove the cooked protein, shred it using two forks, and return it to the pot.
Mix everything together until well combined and serve with warm tortillas and desired garnishes.
Notes
For a refreshing twist, consider adding sliced avocado on top before serving.
