Instructions
Making the Cheesecake Bites
In a mixing bowl, blend the softened cream cheese and powdered sugar until smooth.
Gently fold in the whipped topping, peppermint extract, and crushed peppermint candy.
Using a cookie scoop, portion out the mixture onto a lined baking sheet.
Place the baking sheet in the freezer for about 30 minutes to firm up the bites.
Melt the white chocolate until smooth in a microwave or double boiler.
Dip each chilled bite into the melted chocolate and place back on the sheet.
Sprinkle crushed peppermint candy over each chocolate-coated bite.
Return to the fridge to let the chocolate set for about 1 hour.
Notes
Optional: Drizzle with extra melted chocolate for a decorative touch. Store in an airtight container for up to 5 days or freeze for up to 2 months.
