  • 2 cloves Garlic Minced
  • 4 cups Chicken Broth Homemade adds richness
  • 1 can Corn Fresh, frozen, or canned
  • 1 teaspoon Smoked Paprika Can switch to sweet paprika
  • 1 teaspoon Dried Thyme Can be replaced with Italian seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 cup Heavy Cream Can use half-and-half or coconut milk
  • 1 tablespoon Flour Can be omitted for gluten-free version

Instructions

Preparation

  • Start by dicing the potatoes, carrots, celery, and onion into ½-inch pieces. Mince the garlic finely.
  • Place the chicken breasts or thighs at the bottom of the crockpot. Layer on the prepared vegetables, minced garlic, chicken broth, and seasoning ingredients. Stir gently to combine.
  • Mix in the corn.
  • Cover the crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until the chicken is cooked through and shreds easily.
  • Carefully remove the chicken from the crockpot. Shred it using two forks and return it to the chowder.
  • In a bowl, whisk together the flour and heavy cream. Stir this mixture into the chowder and cook on HIGH for an additional 15-20 minutes.
  • Taste the chowder and adjust the seasoning with salt and black pepper as desired. Garnish with fresh parsley if desired.

Notes

For best flavor, consider sautéing garlic and onions before adding them to the crockpot. Make this chowder ahead of time for improved flavors!
