  • 4 cups Beef Broth or vegetable broth for vegetarian option
  • 1 cup Carrots or substitute with bell peppers or corn
  • 1 cup Celery

For the Creaminess

  • 1 cup Shredded Cheddar Cheese or Monterey Jack, Colby for different flavor
  • 1 cup Heavy Cream can be swapped with half-and-half or whole milk

  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano

  • In a skillet, brown ground beef over medium heat, breaking it into small pieces. Drain any excess grease, then transfer the beef to your slow cooker.
  • In the same skillet, sauté diced onion and minced garlic until softened and fragrant. Add them to the slow cooker.
  • Add the beef broth, diced potatoes, carrots, celery, diced tomatoes (with juices), Worcestershire sauce, dried basil, oregano, salt, and pepper to the slow cooker. Stir everything together well.
  • Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the shredded cheddar cheese and heavy cream until melted and smooth.
  • Before serving, taste the soup and adjust seasoning with more salt and pepper if desired.
  • Ladle the soup into warm bowls, and feel free to garnish with toppings like crispy bacon, green onions, or sour cream.
