Ingredients

For the Pasta

  • 8 oz Macaroni Noodles Cavatappi can be a substitute.

For the Cheeses

  • 2 cups Sharp Cheddar Cheese Freshly grated recommended.
  • 2 cups Colby Jack Cheese Freshly grated recommended.
  • 1 cup Gouda Cheese
  • 2 cups Mozzarella Cheese Freshly grated recommended.

For the Creamy Base

  • 2 cups Heavy Cream Can substitute with evaporated milk.
  • 4 Tbsp Salted Butter Infuses richness into the dish.
  • 8 oz Cream Cheese Optional, enhances creaminess.

For Seasoning

  • 1 tsp Salt
  • 1 tsp Chicken Bouillon Low-sodium recommended.
  • 1 tsp Onion Powder
  • 1 tsp Ground Mustard
  • ½ tsp White Pepper Adjust to taste.
  • 1 tsp Adobo Secret weapon for flavor.

Directions

  • Grate the cheeses and set aside any small chunks for texture.
  • In a large pot, bring water, salt, and chicken bouillon to a boil. Cook macaroni until al dente, then drain.
  • Melt the butter in the same pot over low heat until bubbly and lightly golden.
  • Gradually whisk in heavy cream until smooth.
  • Incorporate half of the grated cheese into the cream, followed by cream cheese and seasonings.
  • Fold the cooked macaroni into the cheese sauce, mixing in reserved cheese chunks.
  • Transfer half the mixture to a baking dish, layer with cheese sauce, and top with remaining macaroni and cheese.
  • Preheat oven to 350°F and bake for about 30 minutes until bubbly. Broil for 2 minutes for a golden finish.

Notes

This dish can be prepared a day in advance. Just assemble and store in the refrigerator; bake when ready.
