  • Add cream of tartar, continuing to beat until soft peaks form.
  • Gradually add sugar, one tablespoon at a time, while beating on high until glossy stiff peaks form.
  • Mix in vanilla and green gel food coloring, stirring gently just to combine.
  • Transfer the meringue to a piping bag fitted with a star tip.
  • Pipe tree shapes onto the prepared baking sheet, stacking layers.
  • Optional: Decorate with sprinkles or edible glitter.
  • Bake for 90 minutes, then turn off the oven and let the cookies sit inside for another hour without opening the door.
  • Cool completely before removing from parchment, then store in an airtight container.
