Add cream of tartar, continuing to beat until soft peaks form.
Gradually add sugar, one tablespoon at a time, while beating on high until glossy stiff peaks form.
Mix in vanilla and green gel food coloring, stirring gently just to combine.
Transfer the meringue to a piping bag fitted with a star tip.
Pipe tree shapes onto the prepared baking sheet, stacking layers.
Optional: Decorate with sprinkles or edible glitter.
Bake for 90 minutes, then turn off the oven and let the cookies sit inside for another hour without opening the door.
Cool completely before removing from parchment, then store in an airtight container.
