Cooking Instructions

  • Preheat your oven to 200°C (400°F).
  • Toss butternut squash cubes in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes.
  • Trim and halve Brussels sprouts, tossing them with olive oil, salt, and pepper. Roast for 20-30 minutes until crispy.
  • In a large pot, bring salted water to a boil and cook the bow tie pasta until al dente; save a cup of pasta water before draining.
  • Heat olive oil in a skillet over medium-high heat, add sliced sausage, and brown until crispy.
  • In the same skillet, add minced garlic and sauté until fragrant, then mix in butter to melt.
  • Add the cooked pasta, seasoning with salt, pepper, and smoked paprika. Toss everything to coat, then mix in the roasted veggies and sausage.
  • Taste and adjust the seasonings as needed.
