Preheat your oven to 300°F (150°C) and lightly spray a non-stick baking pan.
In a food processor, combine shredded coconut, softened coconut oil, and maple syrup. Blend on high until the mixture resembles a clumping dough, about 1-2 minutes.
Using a tablespoon, scoop the dough tightly and transfer each scoop onto the prepared baking sheet, spacing them 1 inch apart.
Lightly press down each scoop with a fork to flatten the cookies.
Bake for 11-14 minutes until lightly golden brown.
Remove from the oven and allow cookies to cool completely.
