Instructions
Preparation Steps
Boil whole carrots until fork-tender, about 10-15 minutes. Let them cool slightly.
Gently press down on the boiled carrots with a fork or palm to flatten to about ½ inch thick.
Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, pepper, and top with Parmesan cheese.
Place on a parchment-lined baking sheet and roast in a preheated oven at 425°F for 20-25 minutes, flipping halfway.
Serve golden and crunchy warm, optionally garnished with fresh herbs.
Notes
