Ingredients

  • 1 pound Carrots Whole carrots, boiled until fork-tender
  • 1 teaspoon Garlic Powder Can use fresh garlic for more flavor

For the Seasoning

  • 1 teaspoon Smoked Paprika Regular paprika can be used for a milder taste
  • to taste Salt Essential seasoning
  • to taste Pepper Essential seasoning

For the Crunch

  • ½ cup Parmesan Cheese Substitute with Asiago or cheddar for variation
  • 2 tablespoons Olive Oil For drizzling while roasting

Instructions

Preparation Steps

  • Boil whole carrots until fork-tender, about 10-15 minutes. Let them cool slightly.
  • Gently press down on the boiled carrots with a fork or palm to flatten to about ½ inch thick.
  • Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, pepper, and top with Parmesan cheese.
  • Place on a parchment-lined baking sheet and roast in a preheated oven at 425°F for 20-25 minutes, flipping halfway.
  • Serve golden and crunchy warm, optionally garnished with fresh herbs.
