Steps to Prepare
Prep the Beef: Cut the beef into 1½-inch cubes, discarding any large fat chunks but leaving some marbled fat for moisture.
Season Generously: Season the beef chunks with black pepper, garlic salt, and celery salt. Sprinkle with flour and toss to coat.
Brown the Meat: Heat olive oil in a skillet over medium-high heat. Brown the beef cubes in batches for about 45 seconds per side.
Sauté Aromatics: In the same skillet, lower the heat and add butter. Sauté the onions until softened, then add garlic.
Deglaze the Skillet: Pour in a splash of red wine, scraping up flavorful browned bits from the skillet.
Cook Low and Slow: Cover and cook on low for 7½ to 8 hours or on high for 3½ to 4 hours.
Add the Finishing Touches: In the last 15 minutes, stir in the green peas and thicken with cornstarch if desired.
Create a Velvety Finish: Finish your stew with a pat of cold butter before serving. Remove bay leaves and rosemary stem.
Notes
