Ingredients

For the Stew

  • 2 lbs Beef Stew Meat (chuck roast) Use chuck roast for the best tender texture
  • 3 cups Carrots Added natural sweetness
  • 4 medium Potatoes (Yukon Gold or russet) Can substitute with sweet potatoes
  • 1 large Onion (yellow) Shallots can be a milder substitute
  • 4 cloves Garlic Fresh garlic preferred
  • 4 cups Beef Broth/Stock Opt for low-sodium
  • 1 cup Red Wine Can substitute with beef stock or grape juice
  • ¼ cup All-Purpose Flour Can use cornstarch or arrowroot for gluten-free
  • 2 leaves Bay Leaf
  • 1 sprig Rosemary
  • 1 teaspoon Thyme Fresh herbs are ideal when accessible
  • 1 cup Green Peas Add just before serving

Instructions

Steps to Prepare

  • Prep the Beef: Cut the beef into 1½-inch cubes, discarding any large fat chunks but leaving some marbled fat for moisture.
  • Season Generously: Season the beef chunks with black pepper, garlic salt, and celery salt. Sprinkle with flour and toss to coat.
  • Brown the Meat: Heat olive oil in a skillet over medium-high heat. Brown the beef cubes in batches for about 45 seconds per side.
  • Sauté Aromatics: In the same skillet, lower the heat and add butter. Sauté the onions until softened, then add garlic.
  • Deglaze the Skillet: Pour in a splash of red wine, scraping up flavorful browned bits from the skillet.
  • Cook Low and Slow: Cover and cook on low for 7½ to 8 hours or on high for 3½ to 4 hours.
  • Add the Finishing Touches: In the last 15 minutes, stir in the green peas and thicken with cornstarch if desired.
  • Create a Velvety Finish: Finish your stew with a pat of cold butter before serving. Remove bay leaves and rosemary stem.

Notes

Serve with crusty bread for dipping. This stew is fully customizable with different vegetables.
