Ingredients

For the Chicken and Sauce

  • 2 lbs Chicken Breasts Substitution: Can use boneless, skinless thighs for more flavor.

  • 10.5 oz Cream of Chicken Soup Substitution: Homemade cream sauce or cream of mushroom soup for different tastes.
  • 1 cup Heavy Cream Optional for a lighter version.

For the Dumplings

  • 2 cups Dumplings Prep Note: Made from all-purpose or whole wheat flour; gluten-free flour can be used.

For the Vegetables

  • 2 medium Carrots Fresh veggies recommended for enhanced taste.
  • 2 stalks Celery Fresh veggies recommended for enhanced taste.
  • 1 medium Onion Fresh veggies recommended for enhanced taste.
  • 3 cloves Garlic Fresh veggies recommended for enhanced taste.
  • 1 cup Frozen Peas Optional: Can be omitted or replaced with other vegetables.

Instructions

Preparation and Cooking

  • Place the chicken breasts in the bottom of your slow cooker.
  • Toss in diced onion, sliced carrots, sliced celery, and minced garlic.
  • Pour in chicken broth and cream of chicken soup; stir gently.
  • Sprinkle thyme, parsley, salt, and pepper over the mixture.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  • Once cooked, shred the chicken using two forks directly in the slow cooker.
  • Stir in frozen peas and heavy cream; mix well.
  • In a separate bowl, mix flour, baking powder, and salt. Add milk and melted butter until just combined.
  • Spoon the dumpling batter over the chicken filling; cover and cook on high for 30-40 minutes until fluffy.

Notes
