  • 3 pieces ripe avocados For guacamole.
  • 1 piece white onion Diced for topping.
  • 1 bunch fresh cilantro Chopped for topping.
  • 2 pieces limes Cut into wedges.
  • 4 oz queso fresco cheese Crumble for topping.

Instructions

Preparation

  • Mix chili powder, cumin, paprika, salt, and pepper in a bowl. Rub this spice mix onto the chicken thighs. Let them marinate for at least 15 minutes.
  • Mash the avocados in a bowl, squeeze lime juice over them, and add a bit of salt. Mix well to make fresh guacamole and set aside.
  • Dice the onion finely and chop the fresh cilantro. Crumble the queso fresco cheese in a separate bowl. Cut the limes into wedges.

Cooking

  • Heat a skillet over medium-high heat. Add the seasoned chicken thighs and cook for 6-8 minutes on each side until fully cooked.
  • Warm the corn tortillas in a dry skillet or over an open flame until pliable and slightly charred.

Assembly

  • Slice the cooked chicken into strips. Fill each warm tortilla with chicken, a spoonful of guacamole, diced onion, chopped cilantro, and crumbled cheese.

Serving

  • Serve the tacos immediately while warm with extra lime wedges and additional toppings like salsa or hot sauce.

Notes

For deeper flavors, consider marinating the chicken for a few hours or overnight. Using a meat thermometer, ensure chicken reaches an internal temperature of 165°F (75°C).
